I've had enough from Monogram to know they don't miss. So when Heart Eyes showed up — a Valentine's Day blend of an anaerobic natural from Panama and a washed from Costa Rica — I was less "holiday novelty" and more genuinely curious. Heart Eyes is part of their Funky Infusions line: “rich, boundary-pushing, and experimental — flavour-bending coffees for curious palates.” I'd never had this particular combination of processes in a blend before, and I wanted to know what the collision would look like in the cup.
The Brew
Fellow Aiden · Expansion Mode · Opus 6.3 · 1:15.5 · 95°C bloom, taper to 91°C · 2 pulses
The anaerobic natural needed room. Expansion Mode gave it space to open without letting the fruit run loose — the taper kept structure intact.
The Cup
Gummy Candy, Cinnamon, Warm Fuzzies — that's what the bag says. What I actually got was fruit-forward and genuinely structured: jammy, ripe sweetness from the Panama up front, the washed Costa Rica holding the whole thing in place beneath it. The cinnamon comes through dry and grounding mid-sip. As it cools, it holds together. Nothing collapses.
I tasted it first with my mom. She takes milk in her coffee, and when I tried a sip of hers, the whole cup transformed. The milk leaned into the sweetness and softened the structure just enough. It became dessert. She loved it. I went back for more of both.
From the Table
A great blend doesn't hide what it is — it makes two things more coherent together than they'd be apart. Heart Eyes does exactly that. Monogram, as expected, does not miss.
